Tourism x Agriculture: Circulation of Staff Members leading to the development of new dishes and its distribution.
Since 1 June 2020, the Karuizawa Hoshino Area (hereinafter called “Hoshino Area”), located in Nagano Prefecture, has been in collaboration with JA (Japan Agricultural Cooperatives) Sakuasama, which started with the circulation of staff members. The peak season for harvesting vegetables is in the summer and due to the effects of the novel coronavirus, the inability for foreign technical interns to visit Japan has led to the lack of human resources within the agricultural industry. This was the start of this project, where staff members of the Hoshino area were arranged to help support any work in the field. In conjunction with the circulation of staff members, there are plans for vegetables to be stocked, used at the restaurant, and sold over the counter.
*Hoshino Area is a small town in the midst of nature and includes facilities such as HOSHINOYA Karuizawa and two other accommodations, Hoshino Onsen Tonbo no Yu, Sonmin-Shokudo, HARUNIRE Terrace with 16 restaurants and shops, and Karuizawa Wild Bird Sanctuary “Picchio”.

The effects of novel coronavirus has restricted the entry of foreigners, where the inability of foreign technical interns to enter Japan has led to the lack of human resource in the agricultural industry. The peak season for harvesting vegetables is in the summer so it is most likely that this problem is going to worsen. With this, the Ministry of Agriculture, Forestry and Fisheries started a new community support project to help maintain agricultural production since 30 April 2020. The Hoshino Area agreed with the actions required to avoid this crisis and, in the hopes to cooperate with this project, the collaboration with JA Sakuasama came up and running.
Delivery of new dishes using fresh vegetables
Alongside the circulation of staff members, vegetables that have been harvested are brought to the restaurant. At Sonmin-Shokudo, a casual Japanese restaurant in the Hoshino Area, there are plans for vegetables to be bought directly from JA Sakuasama to deliver popular dishes like fresh Caesar salad and “whole broccoli” by mid-June. There are also plans for the vegetables to be sold over the counter. By using the vegetables at the restaurant as well as selling them over the counter, we hope to contribute to the consumption of vegetables.
