“Save the Farm Milk Jam” to be used on Shaved Ice at 3 KAI Properties in Tochigi Prefecture

Hoshino Resorts is a hotel management company that operates over 40 properties within and outside of Japan. KAI is a brand of upscale boutique hot spring ryokan and KAI Kawaji, KAI Kinugawa and KAI Nikko, which are all located in Tochigi prefecture, milk jam that was produced in collaboration with Shinrinno Farm (Nasu, Tochigi) will be used to make shaved ice. This “Save the Farm Milk Jam Shaved Ice” will be sold from 11 July to 31 August, 2020.

Background
The outbreak of coronavirus has led to the decrease in consumption of milk and milk products due to the temporary shut down of schools and restaurants since March. Production of raw milk is at its peak through April to June but was forced to be in a situation to discard most of it.

To change this situation, RISONARE Nasu (Nasu, Tochigi) has been in collaboration with Shinrinno Farm, which supplies the milk used at the restaurants, to contribute to the production of “milk jams”. Since April, we have been working on reducing the food loss of milk by producing milk jams that can be stored for a long period of time. In the hopes of the milk jam to reach as many people as possible, we first launched our “Save the Farm Milk Jam Frappe” at 3 RISONARE properties and as a new edition to the menu, we have created “Save the Farm Milk Jam Shaved Ice” for 3 KAI properties to beat coronavirus and the summer heat.

Characteristic of “Save the Farm Milk Jam”
The Jersey cow milk from Shinrinno Farm allows a rich milk jam to be produced. Milk of Jersey cows are more fragrant and tasteful than what we are used to. In order to make use of this characteristic, the milk is boiled down just before it burns, leaving us with a jam that is not too sweet, almost with a sharpness to the taste.

About “Save the Farm Milk Jam Shaved Ice”
Every summer at KAI, each property has a flavor that best describes the area and the local produce of that area. The 3 properties in Tochigi Prefecture, KAI Kawaji, KAI Kinugawa and KAI Nikko, will use the milk jam and produce local to Tochigi to create a one and only flavor.

KAI Kawaji: Kanpyo and Milk Jam Shaved Ice
Kanpyo is dried fruit of moonflower and 95% of it is produced in Tochigi Prefecture. You will be able to devour soft, fluffy shaved ice with Kanpyo boiled in syrup and Milk Jam drizzled on top.

KAI Kinugawa: Blueberry and Milk Jam Shaved Ice
Blueberries are harvested during the summer and it is a popular product in Tochigi Prefecture. At KAI Kinugawa, this blueberry shaved ice will be topped with a dash of Milk Jam to enjoy the sweet and sourness of the fruit and milk.

KAI Nikko: Strawberry and Milk Jam Shaved Ice
Another popular product of Tochigi Prefecture is strawberries, where the yield of strawberries is highest in Japan for 50 consecutive years. This shaved ice can be enjoyed with a view of Lake Chuzenji and Mount Nantaisan.
